Miguel's cousins came over for supper yesterday and that gave me an opportunity to try a new recipe. They do not eat meat so I had to get creative with veggies and such. I found this recipe, made a few adjustments, and we all really liked the results. I figure I might as well share my new recipes to make this more interactive.
Bean Quesadillas
The filling is cooked up in one pan and then spooned onto a cheese studded tortilla. Another tortilla covers the filling and this bean/cheese/veggie packet is heated in oil until golden on both sides. (I only had 6 shells so I put filling on half and folded the tortilla over...also instead of doucing them in grease we put them on tinfoil and then on the BBQ).
Ingredients:
1 tablespoon vegetable oil
1 onion, finely diced
2 cloves of garlic, minced (I used less)
1 (15 ounce) can black beans, rinsed and drained
1 green bell pepper, chopped
2 tomatoes, chopped
1/2 package (10 ounce)of frozen corn
12 (12 inch) tortillas
1 cup shredded Cheddar cheese
1/4 cup vegetable oil (if you want to fry instead of BBQ)
Jo's Additions: I added in some taco seasoning for flavour, some hot salsa, and some red peppers.
Directions:
1. Heat 1 tablespoon oil in a skillet over medium heat, and saute the onion and garlic until soft. Mix in beans, bell peppers, tomatoes, and corn; cook until heated through.
2. Spread 6 tortillas with equal amounts of the bean and vegetable mixture. Sprinkle with equal amounts of the Cheddar cheese, and top with the remaining tortillas to form quesadillas. (Or just put the stuff on half and fold over like me)
3. Heat 1/4 cup oil in a large skillet over medium-high heat. Place quesadillas in the skillet and cook, turning once until cheese is melted and both sides are lightly browned.
This was an excellent vegetarian summer meal. We ate it with fresh cucumber salad and carrot sticks both from our garden.

#94 - Potpies in Freezer
I love to make potpies and put them in the freezer so I can pull them out for lunches or a quick supper. I often think about getting this done but seldom actually do it (hence the reason it was on my list). I wanted to do it at least once in 2.75 years. This week I planned on attempting this task and called my mom to see if she wanted to help...insert little cheesy smile here. She actually had the same thing on her list to do so it worked out great. I got some of the filling ready ahead of time and deboned the chicken. She got all the dough ready. We had those pies ready in no time even with one of us chasing after the babe. Thanks mom for helping me complete #94. Too bad you have finished your 101 in 1001 list or you might be able to cross it off yours too.

My Official 101 in 1001 List

Because I absolutely LOVE crossing things off a list to do (in fact sometimes I add things I have already done or almost completed just so I can cross them off...should I have admitted that? Too late) here is the visual way that I plan to show my project progress.
1. Projects that are in the process will be italicized.
2. Projects that are completed will be written in red (until I figure out how to strike through text.)
3. In the case of tasks that involve developing some sort of habit I will say that the task is not complete until it has happened consistently for 2 months.
***These goals do not include any career- related goals because I am required to make a growth plan each year at school and therefore all career goals will be included in that plan.***

Okay so I am not really sold on all the stuff that happens on blogs but I am drawn into this craze for some reason. I think it stems from the fact that I am a goal-oriented person and I work really well if I have very concrete achieveable (yet challenging) goals to work towards. My career is very goal-oriented so being on mat-leave has sometimes left me feeling like I am not really working towards anything. I know I have a VERY important task....raising a child of God....but within that task I feel as though I am not giving to anyone else nor taking time for God or myself. I need balance and I love the way that people's 101 in 1001 lists reflect a balance of goals across their priorities.
For those of you who are not aware of what this involves here are "the rules."
The Mission:
Complete 101 preset tasks in a period of 1001 days.
The Criteria:
Tasks must be specific (ie. no ambiguity in the wording) with a result that is either measurable or clearly defined. Tasks must also be realistic and stretching (ie. represent some amount of work on my part).
Why 1001 Days?
Many people have created lists in the past - frequently simple goals such as New Year's resolutions. The key to beating procrastination is to set a deadline that is realistic. 1001 Days (about 2.75 years) is a better period of time than a year, because it allows you several seasons to complete the tasks, which is better for organising and timing some tasks such as overseas trips or outdoor activities.
I tend to start projects and never complete them or have too many on the go at once. This is a way for me to be accountable for these projects....even if it is just to myself and Blogger. My next post will be my official first list.
